This Easy Instant Pot Hamburger Soup is a quick and hearty weeknight dinner idea. It’s so comforting with ground beef and mixed vegetables.

Ingredients and substitutions
- Olive oil – or another neutral cooking oil like avocado or canola oil.
- Extra-lean ground beef – you could also try making this soup with ground turkey.
- Yellow onion – white onion or shallots would also work.
- Celery – swap out for carrots as an aromatic instead.
- Garlic – freshly minced garlic is best but jarred minced garlic or even garlic powder can be used.
- Yukon gold potatoes – use another potato of your choice like russet potatoes, baby potatoes or red potatoes.
- Italian seasoning – use a store-bought version or make your own.
- Salt & pepper – to taste.
- Canned diced tomatoes – you can use canned crushed tomatoes instead but the texture may be different. Alternatively, use fresh diced tomatoes and add in more beef broth.
- Beef broth – vegetable broth is the best substitute here.
- Frozen mixed vegetables – use any blend of your choice.

How to make hamburger soup in the Instant Pot

Step 1: Brown the ground beef.
Turn the Instant Pot to sauté mode and sauté the ground beef until browned.
Step 2: Add the remaining ingredients.
Add the celery, garlic, potatoes, Italian seasoning, salt, pepper, canned diced tomatoes, beef broth and frozen mixed vegetables to the pot.

Step 3: Cook on high pressure.
Step 4: Serve and enjoy!
Do a quick release of the pressure then serve!

- Add more flavour to the beef: This soup will already be super flavourful, but feel free to season the beef as its browning on sauté mode with garlic powder, onion powder, paprika or any other spices of your choice.

- Make your own seasoning: Instead of using a store-bought blend, make your own homemade Italian seasoning. It’s super easy and you can store it in your pantry for later!

You can double this hamburger soup recipe as long as you don’t go over your Instant Pot’s maximum line. The cooking time should remain the same.
This soup is already plenty flavourful on its own thanks to the Italian seasoning, but if you want to spice things up a bit, try adding in some garlic powder, onion powder, paprika or even some Worcestershire sauce.
If you want to make this soup even thicker, after the soup has finished cooking and you’ve done the quick pressure release, stir in a cornstarch slurry. Add the lid back on and let the soup sit for about 5 minutes then serve.
If you want to use frozen beef for this recipe, you’ll need to defrost the ground beef in the Instant Pot first. Add the ground beef and 1/2 cup beef broth to the Instant Pot and cook on high pressure for 12 minutes. Do a natural pressure release, then follow the soup recipe instructions as normal. You can definitely add noodles like macaroni or scoobi do pasta to this Instant Pot hamburger soup, but you’ll need to cook them separately. Once the soup is done cooking, stir in the cooked noodles and serve!
