- 1 tbsp olive oil
- 1 lb extra-lean ground beef
- 1 yellow onion diced
- 3 stalks celery finely chopped
- 4 cloves garlic minced
- 2 Yukon gold potatoes chopped into 1/2-inch pieces
- 1 tsp Italian seasoning
- 1/2 tsp each salt & pepper
- 26 fl oz canned diced tomatoes
- 4 cups beef broth
- 2 cups frozen mixed vegetables
Turn Instant Pot to saute mode then add olive oil. Once hot, add ground beef, breaking up with a spoon and sauteeing for 5 minutes until browned.
Add remaining ingredients, then cook on high pressure for 2 minutes. Do a quick release of the pressure, then serve and enjoy!
Make your own homemade Italian seasoning.
Serve this soup with a side of garlic bread, cornbread or cowboy caviar.
If you're using frozen beef, cook the beef for 12 minutes at high pressure with 1/2 cup beef broth first. Do a natural pressure release, then follow the instructions as normal.
Store the leftovers in the fridge for 5 days. Reheat in the microwave for 1-2 minutes or in a pot on the stovetop.
Freeze this soup for up to 3 months. Defrost in the fridge or reheat from frozen for 4-5 minutes in the microwave.
