Instant Pot Ground Turkey Tacos

These Instant Pot Ground Turkey Tacos are so easy and a healthy weeknight dinner idea. You can even use frozen turkey to make them!

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • Salt & pepper, to taste
  • 2 tbsp taco seasoning
  • 1/2 cup chicken broth

To serve

  • Corn or flour tortillas
  • Lettuce
  • Tomatoes or pico de gallo
  • Red onions
  • Cheese, grated
  • Sour cream

Instructions

  • Heat Instant Pot on saute mode. Add olive oil, waiting for 1-2 minutes to ensure oil is hot. Add ground turkey and taco seasoning, breaking up and browning for 3-4 minutes. Season with salt & pepper to taste. Turn off saute mode and pour in chicken broth.
  • Place lid on Instant Pot and make sure valve is set to seal. Press the pressure cook button and set to high, then cook for 2 minutes. Instant Pot will take about 5-10 minutes to come to pressure then pressure cook for 2 minutes. While meat is cooking, prepare toppings.
  • Do a quick release of the pressure on the Instant Pot by flicking the switch at the top with a spoon. Open the lid when pressure gauge has dropped and the lid opens easily. 
  • Serve ground turkey mixture with a slotted spoon, dividing among corn tortillas and adding taco toppings of choice. Enjoy!

Try out different toppings like guacamole, corn with cotija cheese, cilantro, pickled jalapenos and more.
Store the leftovers separately in the fridge for up to 5 days. Reheat the meat in the microwave for 1-2 minutes then assemble your tacos fresh.
Freeze the ground turkey for up to 3 months. Defrost in the fridge overnight then reheat as normal, or sauté from frozen on the stovetop.
