This delicious and easy Instant Pot Salisbury Steak is ready in just 30 minutes – serve it with mashed potatoes and a creamy mushroom gravy!

Ingredients and substitutions
- Ground beef – you could also try swapping this out for ground turkey.
- Breadcrumbs – panko would be the best substitute here.
- Yellow onion – white onion can be used instead.
- Tomato paste – use 6 tbsp. of tomato sauce or tomato puree instead.
- Garlic – fresh minced garlic is best but jarred minced garlic or garlic powder would work too.
- Egg – I suggest fresh eggs, but eggs in a carton would also work.
- Olive oil – or any other neutral cooking oil like avocado or canola oil.
- Fresh parsley – feel free to use another fresh herb of your choice like basil or oregano.
- Salt & pepper – to taste.
Gravy
- Olive oil – see the substitution notes above.
- Mushrooms – use any mushroom variety of your choice.
- Yellow onion – see the substitution notes above.
- Garlic – see the substitution notes above.
- Dijon mustard – stone-ground mustard would be the next best thing.
- Dried thyme – you can try using oregano, but the flavour will be slightly different.
- Brown sugar – make your own brown sugar using white sugar and a bit of molasses.
- Beef broth – vegetable broth would also be good.
- Cornstarch – arrowroot or potato starch are the best substitutes for cornstarch.
- Heavy whipping cream – you can use half-and-half or a non-dairy milk but the gravy won’t be as creamy.
- Salt & pepper – to taste.

Frequently Asked Questions
Salisbury steak is a delicious and comforting dish made of ground beef, breadcrumbs, onion and egg with a gravy or brown sauce.
It’s traditionally made of ground beef. This recipe uses extra-lean ground beef to make it a tad healthier but you can also swap out the ground beef for ground turkey.
There are 522 calories per serving in this recipe, including the Salisbury steak and the mushroom gravy. You can cut down on the calories by using ground turkey instead of ground beef and swapping out the heavy whipping cream for milk or your favorite non-dairy alternative.
The dish is named after James Salisbury, an American physician from the late 1800s who was a proponent of a meat-centred diet. He recommended Salisbury steak to help a range of health problems such as digestive issues (although there’s no evidence that eating a good steak will help with your stomach issues). It’s an Americanized version of the Hamburg steak, a ground beef patty that was made popular by Germans in the 19th century.

Storing and reheating
Store any leftover steak and gravy separately in the fridge for up to 4 days. When you’re ready to enjoy, add the steak to an oven-safe dish, pour the gravy over top, cover with tinfoil and bake for 30 minutes at 325° Fahrenheit. You can also reheat in the microwave or reheat on the stovetop – just make sure to reheat the steak and gravy together so the steak doesn’t dry out.
Freezing this recipe
This recipe freezes beautifully! You can freeze the Salisbury steak and gravy separately for up to 3 months in airtight glass containers. Let them thaw in the fridge overnight then reheat together in the oven, on the stovetop or in the microwave.

Instant Pot Salisbury Steak {30-Minute Meal}
Ingredients
For the salisbury steak:
- 1 lb 80% lean ground beef
- 1/2 cup breadcrumbs
- 1/2 medium yellow onion, finely chopped
- 2 tbsp tomato paste
- 2 cloves garlic, minced
- 1 large egg, whisked
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp olive oil (for browning)
- fresh parsley (for garnish)
For the gravy:
- 2 tbsp olive oil
- 2 1/2 cups mushrooms, stems removed and sliced thin (1 8oz package)
- 1/2 medium yellow onion, finely chopped
- 4 cloves garlic, minced
- 2 tsp dijon mustard
- 1 tsp dried thyme
- 1 tsp brown sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups beef broth, divided
- 2 tbsp cornstarch
- 2 tbsp heavy whipping cream
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, onion, tomato paste, garlic, egg, salt, and pepper. Using your hands, mix well and form 4 equally-sized patties.
- Heat a large frying pan over medium heat and add the 1 teaspoon of olive oil to prevent sticking. When the oil is heated and shimmering, add the patties and brown, about 2-3 minutes on each side. You may need to do this in batches to avoid overcrowding. Remove the patties and set them aside.
- Turn your Instant Pot to saute mode and heat the 2 tablespoons of olive oil. Add mushrooms and onion and saute until the onions are slightly translucent, about 3-4 minutes.
- Add garlic and cook for 1-2 minutes until a light golden brown.
- Add dijon mustard, thyme, brown sugar, salt, and black pepper. Stir to combine and cook until fragrant, about 1 minute.
- Turn saute mode off. Pour in half of the broth, stir, and place the patties on top. Seal the Instant Pot and cook on high pressure for 10 minutes. Quick release the pressure once the time is up.
- Remove the patties and set them aside.
- In a small bowl, whisk the remaining broth, cornstarch, and heavy whipping cream together.
- Turn on saute mode. Add the broth/cornstarch/cream slurry. Cook for 2-4 minutes until thickened, whisking constantly.
- Pour the gravy over the patties. Garnish with parsley and serve.
