These Instant Pot Beef Tips are super tender and covered in a rich, flavourful gravy. Serve over mashed potatoes for a complete meal.

Ingredients and substitutions
- Olive oil – use any neutral cooking oil like avocado or canola oil.
- Sirloin beef tips – you could also cut sirloin tip roast into 1 ½ inch chunks. Stew meat would also work but you’ll need to add 10 minutes on to the cooking time.
- Salt & pepper – to taste.
- Yellow onion – white onion or shallots are good substitutes here.
- Red wine – dry white wine, beer or extra beef broth would also work.
- Garlic – freshly minced garlic is best but jarred minced garlic will work in a pinch.
- Worcestershire sauce – replace with soy sauce, coconut aminos, sherry vinegar or even steak sauce.
- Cornstarch – flour or arrowroot would also help thicken the gravy.
- Cremini mushrooms – swap out for button mushrooms instead.
- Beef broth – you can use vegetable broth, but you’ll need to add in some extra Worcestershire or soy sauce to make the gravy more flavourful.
- Mashed potatoes – this dish is just as amazing over cooked rice, egg noodles or even mashed cauliflower.
- Parsley – garnish with fresh oregano, thyme, chives or basil instead.

How to make beef tips in the Instant Pot

Step 1: Prep your ingredients.
Step 2: Sauté the beef and onions.
Sauté the beef and onions until lightly browned, then remove from the pot.

Step 3: Deglaze the pot.
Sauté the red wine in the pot until reduced by half to deglaze the pot.
Step 4: Add everything to the Instant Pot.
Add the beef, cornstarch slurry, garlic, Worcestershire, mushrooms and broth to the pressure cooker.

Step 5: Cook on high pressure.
Cook on high pressure for 20 minutes, then do a natural release of the pressure.
Step 6: Serve and enjoy!
Serve the beef tips over mashed potatoes, garnish with parsley and serve.

Recipe tips & tricks
- Deglaze the pot: This is a step you don’t want to skip, as it’ll help prevent the burn notice.
- Use dry wine: I’d highly recommend using a dry red wine or even dry white wine to give the sauce the most flavor. If you need the recipe to be alcohol-free, you can use more broth instead.
- Increase time for frozen meat: If you’re using frozen beef tips, increase the cooking time to 10 minutes.
- Double the recipe: As long as you don’t go over your pressure cooker’s maximum time, you can double this recipe. Cooking time will remain the same.
- Make tacos: Swap out the red wine for lime juice and 1/2 tsp cumin, then dice the meat and use it to make tacos instead.

Frequently Asked Questions
What cut of beef is best for beef tips?
For this recipe you’ll use beef tips, which are often cut from the sirloin but they can also be cut from the tenderloin, tri-tip or flank. You could also use sirloin tip roast cut into 1.5-inch chunks or stewing meat (if you use stewing meat, add 10 minutes to the cooking time).
How do you thicken the sauce?
If you like the sauce to be a bit on the thicker side, remove the beef tips when they’re done cooking, and stir a cornstarch slurry into the sauce. Add the lid back on and let the mixture sit for about 5 minutes, then serve.
Can you make it in the crockpot instead?
I personally haven’t tested this recipe in the crockpot. If you’re looking for a slow cooker option with a similar flavor, I’d recommend trying out my slow cooker beef stew!

Storing and reheating
Store any leftover Instant Pot beef tips in the fridge for up to 3 days. Reheat them in the microwave for 1-2 minutes or in a pan on the stovetop. If you’re reheating these beef tips in the microwave, I suggest sprinkling some water over top of the meat first to help it retain its moisture.
Freezing this recipe
Beef tips are also easy to freeze. Let them cool completely before storing them in freezer-safe Ziploc bags or airtight containers. You can keep them frozen for about 2 months.
Keep in mind that if you made frozen beef tips in the Instant Pot, you cannot re-freeze the meat.

Instant Pot Beef Tips {Ultra Tender}
Ingredients
- 1 tbsp olive oil
- 1 lb sirloin beef tips
- 1/2 tsp each salt & pepper
- 1 yellow onion, diced
- 1/2 cup red wine
- 2 cloves garlic, minced
- 1 tbsp Worcestershire
- 1 tbsp cornstarch
- 1 tbsp water
- 8 oz cremini mushrooms, halved
- 1 cup beef broth
- Mashed potatoes, to serve
- Parsley, for garnish
Instructions
- Turn Instant Pot to saute mode, then add olive oil. When oil is smoking, saute beef, salt & pepper and onions for 2-3 minutes until lightly browned. Remove beef, then add in red wine and saute until reduced by half, about 5 minutes.
- Turn off saute mode, then add beef back to pot. Mix cornstarch in a small bowl with water, then add it along with garlic, Worcestershire, mushrooms and beef broth.
- Place lid on Instant Pot, press the pressure cook button and set to high, then cook for 20 minutes. The Instant Pot will take about 5-10 minutes to come to pressure, then notify you it's done by beeping.
- Press the Cancel button then let the Instant Pot do a natural release of the pressure for 10 minutes. Follow by doing a quick release. Open the lid when pressure gauge has dropped and the lid opens easily.
- Serve beef tips overtop of mashed potatoes and garnish with parsley. Serve and enjoy!
