- 1 tbsp olive oil
- 3 cups vegetable broth
- 2 cups dry green, black or brown lentils
- 1/2 tsp salt
Add olive oil to Instant Pot, followed by broth and lentils. Shake salt overtop of lentils. Place lid on Instant Pot and make sure valve is set to seal.
Press the pressure cook button and set to high, then cook for 10 minutes. Instant Pot will take about 5-10 minutes to come to pressure then pressure cook for 10 minutes.
Do a quick release of the pressure on the Instant Pot by flicking the switch at the top with a spoon. Open the lid when pressure gauge has dropped and the lid opens easily.
Gently stir, then serve and enjoy!
NOTE: You can use red lentils, but cut the cook time in half to just 5 minutes and follow with a quick release as usual.
For a little extra flavour, add some minced garlic or chopped fresh herbs to the pot before cooking.
One of the (many!) benefits of cooking lentils in a pressure cooker is that you don’t have to soak them! You can if you’d like but it’s a matter of personal preference.
Store cooked lentils in the fridge for up to a week in a Ziploc bag. Reheat them in the microwave or add them right to whatever recipe you’re using them for.
Freeze them for up to 6 months. Make sure to flash freeze them first for 2 hours so they don’t stick together.
