Foolproof Instant Pot Steel Cut Oats {5 Ways}

Ingredients

  • 1 tbsp coconut oil
  • 4 cups coconut or almond milk
  • 2 cups water
  • 2 cup steel cut oats
  • 1/4 cup honey or maple syrup (optional)

Tropical

  • 1/4 cup shredded coconut
  • 1 cup diced pineapple

Mixed berry

  • 1 cup frozen mixed berries

Apple cinnamon

  • 1 tsp cinnamon
  • 1 green apple, diced

Chocolate

  • 2 tbsp cocoa powder

Pumpkin spice

  • 1/2 cup pumpkin puree
  • 1/2 tsp cinnamon

Instructions

  • Pour coconut oil, coconut milk, water and steel cut oats to Instant Pot in that order. Place lid on Instant Pot and make sure valve is set to seal. 
  • Press the pressure cook button and set to high, then cook for 3 minutes. Instant Pot will take about 15 minutes to come to pressure then pressure cook the 3 minutes.
  • Allow the pressure to release naturally (about 15-20 minutes), then open the lid when pressure gauge has dropped and the lid opens easily. Stir in honey or maple syrup if desired.
  • Remove lid and stir in toppings of choice. Divide among 6 meal prep bowls and garnish with additional toppings (optional). Serve and enjoy! Leftovers will last 5 days in the fridge.

Notes

Try adding in different toppings like nut butters, seeds, Greek yogurt, mashed banana and more.
Store the leftovers in the fridge for up to 5 days. Eat cold or microwave for 1-2 minutes.
Freeze your steel cut oats for up to 3 months. Defrost in the fridge overnight then reheat in the microwave for 1-2 minutes.
