  • 1 tbsp olive oil
  • 1 lb turkey sausages
  • 1 yellow onion, diced
  • 2 stalks celery, diced
  • 1 green pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1/2 tsp each salt & pepper
  • 1 (540mL) can red beans, rinsed and drained
  • 1 (796mL) can fire roasted tomatoes
  • 1/2 cup chicken broth
  • 1 cup white rice
  • 1 1/2 cups water
  • 1 tsp butter

  • Heat Instant Pot on saute mode. Add olive oil, then sausages, browning for 3-4 minutes. Remove sausages and let cool 5 min before slicing. Turn off saute mode and add remaining ingredients except for ingredients under the rice heading, adding in the order in which they are listed. Do not stir.
  • Place lid on Instant Pot and make sure valve is set to seal. Press the pressure cook button and set to high, then cook for 2 minutes. Instant Pot will take about 5-10 minutes to come to pressure then pressure cook for 2 minutes.
  • Meanwhile, cook the ingredients under the rice heading in a rice cooker or in a pot on the stove until liquid is absorbed.
  • Do a quick release of the pressure on the Instant Pot by flicking the switch at the top with a spoon. Open the lid when pressure gauge has dropped and the lid opens easily. Serve alongside rice and enjoy!
